I never have time for breakfast before I head in to work in the morning, but after seeing these things I may have to make a batch the night before. Over at Cookin’ in the ‘Cuse, they have a delicious recipe for breakfast cookies that contains bacon of course. The cookies resemble an oatmeal raisin cookie, but when you bite into them you are in for much more than just raisins!
- 1/2 lb. bacon
- 1/2 cup butter
- 3/4 cup sugar
- 1 egg
- 1 cup of flour
- 1/4 teaspoon baking soda
- 2 cups of multi-grain flakes or corn flakes
- 1/2 cup raisins
And this is how you make it according to “Cookin’ in the ‘Cuse”
“Preheat oven to 350 degrees. Cook bacon until very crisp, drain well and break into 1/2 inch pieces. Beat together butter and sugar till light and fluffy. Beat in egg. Combine flour and baking soda; stir into butter mixture. Stir in bacon, mult-grain flakes and raisins.
Drop by rounded teaspoonfuls onto ungreased cookie sheet. Space 2 inches apart. Bake for 15-18 minutes. Remove to rack to cool–about 2 minutes, then remove from rack. ”

I would like to say that does not sound very appetizing to me. Everyone says dont judge till you have tried it, but i must have to say I will not be trying this. It sounds disgusting and just not right.

I’ve had this recipe for 30 years. I use real bacon bits from the salad aisle and find it less greasey. I don’t care for raisins so half batch I left them out and the other I added orange extract and white chocolate chips. Next time I am going to try some maple flavoring.

Thanks, this blog aided me in solving some problems with the latest release candidate, Why do they always seem to leave out vital documentation when they upgrade? It may be minor to them but not for us! I’m sure i’m not alone either.
